I am a stay at home mom to a beautiful two year-old daughter, crazy about cooking and passionate about nutrition. I graduated in 2014 with a Bachelor of Science in Nutrition from the University of Northern Colorado and have several year’s experience working in food service. When my daughter is a little older I would like to pursue a Masters degree in plant based nutrition, but for now I am having a great deal of fun trying out my crazy ideas and recipes and learning how to blog about them.
Why am I vegan? A few years ago I watched a documentary called Food Matters. Shortly thereafter I became vegan and began working on my nutrition degree. I decided that if, during the course of my studies, I found any convincing argument proving that a plant based diet was unhealthful and that humans need animal products in order to be healthful I would stop being vegan. Well, I graduated and I am as vegan as can be. I also am healthier, thinner and more vibrant than ever before. My meals leave me feeling nourished, light and alert. I love it! There is nothing that I miss because if there were, I would find a way to make it vegan.
I believe that the foods that we choose to eat should nourish our souls as well as our bodies. For this reason, I want to share the way that I eat every day with you. I don’t like the usual clichés that surround plant-based foods (bland, boring, strange and unsatisfying). The foods that I love to prepare are the exact opposite, and I like to call my style of cooking vegan comfort food. The recipes that I share on this blog are my best attempts at creating plant-based cuisine that is not only healthful and guilt free, but also incredibly delicious and soul-deep satisfying.
Most of the recipes I share are fairly simple, week night style foods. I have an adventurous spirit, however, so I will occasionally be sharing some recipes that may take a bit more time and effort. I’ll admit that sometimes I like to do things the hard way, but I have found that cutting corners often means missing out on the best things food has to offer. That said, I will always try to make even my most extravagant very doable.
I love feedback, so please let me know if you like something (and if you don’t). I also enjoy “veganising” foods and recipes and am always looking for new challenges, so ideas in that area are always welcome.

Hey. Thanks for introducing me to your blog. Love, love love your recipes. Simple and the type of comfy type food that I sometimes like myself, but more importantly are going to keep non vegan ‘meat and potatoes’ types I know from whining about ‘rabbit food’.
Lots of great ideas. I am going to start cooking for a food bank and I need lots of ideas like you have on your blog. Food that is easy to make in bulk, nutritious and also not too expensive. Some of these people live outdoors or don’t always get regular meals, so the food needs to be really filling and satisfying, but also good, nutritious food that will feel familiar to people. I have said that I will only cook vegan food, so I sort of feel that I have to prove how much better it would be to provide vegan food all the time. I know that if I get it right I can prove my point just by turning up with the best food – tastes good, is good for you, simple to make and inexpensive, while still having all the qualities of food people are familiar with already.
Anyway, sorry for the ramble, but just so glad to have found your blog.

I am so incredibly thrilled that you can use my ideas and recipes for such a great cause. I have always said that if I can help just one individual follow a more healthy lifestyle I am happy, and it is people like you who show me that even when I am frustrated because a recipe didn’t turn out, or because my toddler is trying to pull my plated, staged, ready to photograph food off the table that this is all so much more than worth it!

Thanks. We are just about to hit the zucchini glut here. It is a mystery to me why all my neighbours and coworkers, why we all decide to grow the same vegetables. Anyway, if you have any suggestions, as I am sure they will show up with tons of the zucchini (a lot already turned to marrow) with a hope that I will turn it into food.

Really enjoying your blog. I’m about to embark on a month of dairy-free (have been veggie for 20+ years) and am interested to see where it takes me… I already make a lot of vegan meals, but will just have to do a bit more thinking about what is in various products, as well as how to adapt various meals. Will most definitely be checking out your blog for tips and recipes 🙂
